We took the cooking class to make creme brûlée and chocolate soufflé, but we also ended up also making crepes suzette and financiers (a lovely surprise.) Anne was an excellent instructor - patient, knowledgeable, and very funny. We loved the group setting and easily made friends with the other participants. "2 couples, we wanted to do something different on this trip to Paris. And the Latin Quarter food tour was a huge winner! Emily was our gastronomic guide, she was both incredibly knowledgeable (away from doing tours, she writes about and has a degree in the history of food), and incredibly upbeat and super friendly. We spend a couple of hours walking around the Latin Quarter, stopping here or there to both eat and buy parts for the lunch. The history of the French Baguette really stood out (who knew there used to be price caps!). Then back to the Foodist HQ for a delicious and classic 4 course French lunch with lots of wine. Fanny not only was an amazing teacher but she brought humor and joy to the class. Even if the macarons were a bust it would have been great fun. "LeFoodist was an excellent experience and was very authentic. The location is in an old wine cellar which adds to the experience. Upon arrival we were greeted with coffee and water. My 16 yr old daughter and I did 4 desserts: soufflé, crepes ( 2 different sauces), financiers small cakes and crème brûlée. There were 6 others ( 2 families) so the experience was very intimate. It was very hands on which we really enjoyed. Florence our teacher was high energy, a great teacher, and has a great sense of humor. We learned a lot in addition to having lots of fun. After all of the cooking, the desserts were plated and we went upstairs to a fully set table with flowers and tasted all the desserts with a glass of wine/water. Great time had by all. "Yesterday, my fiancée booked the three course lunch cooking class for me for my birthday while we celebrated in Paris.   I expected that the food that we made would be very tasty - it was. I expected that the techniques would be useful, they were. But what really shined from this experience was Fred’s depth of knowledge about cooking.   He shared a comprehensive understanding of cooking from a scientific level. We didn’t just learn the techniques to made the dish, he got us to understand why certain techniques make sense (for instance why ice cream must be churned, why spices become less potent when cooked, how to grow carrots to protect them from pests).
I cannot overstate how enjoyable our experience was. We learned, we laughed, we cooked, we ate. We will definitely be coming back during future visits to Paris.

"I had some concerns that this class would be less about the techniques of good bread baking and more trying to keep us entertained Not at all! Luc seems very dedicated and knowledgeable and was a great teacher. It was incredibly organized. We worked for three straight hours - nonstop - alternating among the baguettes, the brioche, and the ciabatta. "Paulo was our chef and we had so much fun! There were 12 of us in the class, which was a lot of cooks in the kitchen, but Paulo did a great job keeping us all to task. We learned some good tips and all pitched in to make a delicious, multi-course meal, served at a beautifully set table with great wines. "We participated in the 10:00 AM class in Paris on Thursday, April 4, on baking four desserts: Chocolate Souffle', Crepes Suzette, Creme Brulee & Financier. Chef Stephane was an excellent teacher - and no surprise as he teaches as well as other specialists within the pastry-making world - so he was the perfect guide.
