Macarons require a few steps and tricks to make perfectly;

in this class we will show you those and you will get to practice so you feel confident you can make those at home on your own.

Specifically, you will see the more complex Italian Meringue, adding colorant the right way, the macaronade, and making tasty fillings between two shells.

After making your macarons, we will taste them at teatime and share some of our stories about French culture.

A Dream Come True in Provence

When Amanda and I first started dreaming Le Foodist up (20 years ago) our dream was to take people to the various regions of France, and help them discover the local regional cultures through local food and wines. The idea was simple. Go and cook into the various regions of France, one week at a time. Take the opportunity to discover the region from a gastronomic point of view: meet local producers, visit local markets, taste local wines, eat at great local restaurants, and even learn to cook with local Chefs. One of the reaons we so wanted to do this is because one of the most important features of French cooking and culture in general is its regional diversity of landscape, produce and traditions. The other is quite simply because we love traveling France. Of course we started following our dream by opening Le Foodist in Paris a few years ago now. But we are very excited to now also take a few people to France - this country not far from Paris ... - one week at a time to continue our journey to integrate food and culture through unique experiences. even though there are many regions to explore, starting with Provence felt alomost obvious. And we are all the more excited as we have found a great location to do so. Just below the beautiful Dentelles de Montmirail, we will be welcoming you for a memorable week at La Table Longue, in the quintessential Provence village of Sablet.



Hands-On Cooking Sessions

Cooking is obviously at the heart of what we do at Le Foodist. So every day, we will have some hands-on cooking classes. From 2 hours to 5 hours a day in one or two sessions, depending on the day. To give just a few examples, we will make classic recipes such as Baguettes or French Tarts and Soufflés, but also obviously local dishes such as Ratatouille or Fish Soup. We will work with the wonderful fruits and vegetables as well as fish and meat which will be in season when you are visiting. All this while exploring low temperature and slow cooking, how to organize oneself to cook ahead for one week – or for a buffet party. And as always at Le Foodist, this is not just about recipes, this is about techniques and kitchen know-how.


Discovering the Region through its Wines, Produce and People

We will have the opportunity to discover local wines everyday at the table, but also through specifically organized wine tastings. One will be focused on discovering the broads regions of France and will happen at our Villa. We will have a couple other sessions to discover the wines of the region more specifically. This is great news because we are in the heart of Côte du Rhône - with names as prestigious as Chateauneuf du Pape only miles away, but also with great Syrah (Shiraz) based wines such as Côtes Rôties or Hermitage a bit furhter north. Last but not least, this is also the land of some of the best Rosé wines, like Tavel. And no wine exploration would be complete without meeting a local wine maker to explain how he takes into account the effects of the soil and the climate in making his wine; what we call Terroir.

So Provence, steeped in sun and history, has beautiful vineyards. And to many villages, towns and markets to visit. But also wonderful people to meet who produce those iconic specialties which almost define Provence: lavender, olives, honey, ... So we have planned mutliple visits through the week to meet these people who are at the origin of what makes any region special: the producers and farmers. A unique opportunity to discover the landscape, the produce and the people in a totally integrated and fully gastronomic experience.
